EVENT: How to Make Cheese Truly Japanese

In 2018, Malory brought a selection of Japanese cheeses to the U.S. to share with an intimate group of 16 cheese professionals attending the American Cheese Society Conference in Pittsburgh, PA. 
The event was the catalyst for many different things - from the incorporation of a Japanese cheese-focused export company to embarking on an array projects opening the door to the Japanese cheese world. We're excited to share all the details with you at the event. 
Your hosts, including Japanese cheese specialist Malory Lane, are 3 of the most connected cheese professionals in Japan. Aki Sakagami, Yoshihiko Sano, and Yuko Sato all work within Japan's Cheese Professional Association (CPA) in different roles from organizing the biannual Japan Cheese Award to holding the annual Cheese Professional Certification Exam. They have traveled from Japan to learn from the American Cheese Society Conference and connect with American cheese professionals like you. 
One of the main purposes of the event is to facilitate connections between the Japanese and American cheese worlds. With greater understanding of each others' cheese cultures, there will be endless opportunities to collaborate and foster lasting friendships into the future.
The event will start with a short seminar by Malory discussing cheese as a non-traditional Japanese product and how it can be fused with the Japanese identity. After a Q&A, the room will open up to a casual Tasting & Sake Hour, where you can taste Japanese cheeses, sake, and snacks from Japan while connecting with fellow attendees and your hosts.
